#6 The Twelve Schools of BBQ are going to disagree with that as well as the restaurant owners I worked for who built their entire enterprise around wood burning pizza ovens. Not once have I ever heard the bragging of smoking a brisket done with pine.

The restaurant I worked at was purpose built around wood fired pizza ovens. We do our corned beef and pastrami in the smoker.

There is also the application of heat which is important.
